What Are Grease Traps?

Grease traps are large, box-shaped devices that are attached to the waste drains of your restaurant. These drains are essential if your restaurant serves fried items like french fries, chicken wings, pizza logs, onion rings, and other common pizzeria foods. If you do not have a trap, then grease and oil will flow freely down your drains. As the grease cools, it will solidify and collect on the insides of the drainage pipes. A complete sewer clog will occur eventually and require extensive repairs. 

Grease traps prevent clogs by safely collecting the grease so it can be removed from the trap on a regular basis. The trap is connected to your drainage pipe. A single large trap may be connected to the main sewage pipe, or your floor, prep sink, and dishwashing sink drains may all be fitted with their own traps. This depends on the size of your kitchen, the amount of grease that ends up in your drainage system, and also the location of your pipes and sewage line. How Does A Grease Trap Work?

Grease traps are made specifically to collect grease before it has an opportunity to move through your sewage system. There may be several different types of traps that can be purchased or installed, but most devices work in a similar manner. 

The trap box is connected to the drainage line with both an inlet and outlet pipe. The inlet is fitted with a flow control device. This slows down the flow of the grease, water, and food debris. An air intake is also installed to mix up the debris thoroughly. This stops grease from depositing around the grease trap inlet. 

Once the waste material enters the trap, it is diverted down to the bottom of the box. The flow of the waste slows significantly. This gives the grease the opportunity to cool and rise to the surface of the trap. Some solid food matter is collected by the grease and pulled to the top of the trap as well. Water drops to the bottom of the container and moves through the outlet pipe. The water takes the dissolved food matter with it.

How Often Does The Trap Need To Be Cleaned?

While a grease trap is meant to stop clogs from forming, the trap itself can fill with debris and stop water from flowing freely. This typically happens long after the trap has been installed, but it can result in backed-up pipes and the accumulation of waste water and grease in your kitchen area. 

To prevent clogs and backups, you need to schedule grease trap cleanings on a regular basis. Some restaurants can get away with scheduling a cleaning once every several months, while others require grease trap cleaning once a week. Most establishments require something in the middle of these two extremes. Monthly scheduled cleanings are the most common, so think about this option when first setting up your cleanings. 

Grease trap cleanings involve the physical scraping of the grease trap to remove all solid material. While you can complete the cleaning yourself, it is wise to hire a professional for this. Not only is the job unpleasant, but many grease removal businesses will collect the grease and recycle it. The grease is then used to create different types of fuel, so the professional cleaning is actually good for the environment.
